Falafel Wrap with Cucumber & Yogurt Sauce

Ingredients

Wheat tortillas4
Fresh falafel12
Plant-based yogurt8 tbsp
Cucumber600 g
Mixed salad greens4 handfuls
Garlic1 clove
Lemon4 wedges
Fresh mint leaves (optional)8 sprigs
Olive oil4 tbsp

Preparation

1.

Heat a drizzle of olive oil in a pan over medium heat. Warm the falafel for 6 to 7 minutes, turning regularly, until golden on all sides.

Meanwhile, wash and cut half of the cucumber into sticks.

Grate the rest of the cucumber or cut it into small cubes. Season with salt, then drain well.

Prepare the yogurt sauce. In a bowl, mix the plant-based yogurt, grated garlic, the drained grated cucumber, chopped mint if you have some, the lemon zest and juice, and a drizzle of olive oil. Season with salt and pepper.

Spread the yogurt sauce on the tortilla. Add the cucumber sticks, falafel and salad greens. Add a splash of lemon juice and a few mint leaves if you have any left. Adjust the seasoning to taste.

Fold both edges of the wrap inward, then roll it up tightly. Cut it in half if you like. Serve the falafel wrap with the yogurt sauce, it's ready!
