Cut the ham slices in half. If using the special sauce, mix the grated Comté, heavy cream, mustard, and Espelette pepper in a bowl.
Butter one side of each slice of bread. Place one slice of Croque-Monsieur cheese and a half-slice of ham (or two if using thin slices) on the unbuttered side of 4 slices of bread.
Top with the second slice of bread, buttered side facing inwards. Spread 1/4 of the special sauce on top of each sandwich, if using.
Preheat the oven to 200°C (392°F). Grill the sandwiches for about 10 minutes, until golden and crispy.
Serve hot with a green salad dressed with mustard vinaigrette.
Tips
For a traditional version, use béchamel instead of the special sauce. To make béchamel, melt 25 g butter in a saucepan, stir in 25 g flour, then gradually add 250 ml milk, whisking constantly to avoid lumps. Season with salt, pepper, and nutmeg. Optional: You can also experiment with the special sauce made from grated cheese, cream, mustard, and Espelette pepper for a unique flavor!
