Salmon with Broccoli Mash

Ingredients

Garlic1 clove
Fresh salmon4
Fresh broccoli1 kg
Butter80 g

Preparation

1.

Thaw the salmon if needed. Trim the broccoli stem and break it into florets, halving or quartering them depending on size.

2.

Add the broccoli florets to boiling water and cook for 8 minutes.

Meanwhile, melt half the butter in a pan (about 10 g per person).

Add the salmon fillet skin-side down and sear for 3 minutes over high heat. Season with salt and pepper.

5.

Finely grate the garlic clove over the pan. Baste the salmon with the butter, then flip it. Cook for 5 minutes over low heat. Cover and keep warm.

6.

Drain the broccoli. Mash it and add the remaining butter (about 10 g per person). Season with salt and pepper.

7.

Serve the broccoli mash with the salmon, it's ready!

Tips

For a zero-waste meal, add your broccoli stems cut into small cubes to your dish, or use them to make a soup.
