Pasta Salad with Salmon and Zucchini

Ingredients

Egg pasta (grattini)300 g
Fresh salmon200 g
Zucchini2
Olive oil3 tbsp
Garlic1 clove
Fresh parsley10 g
Lemon (for juice)1
Salt1 tsp
Pepper1/2 tsp

Preparation

1.

Prepare the seasoning: remove the skin and bones from the salmon and cut it into small cubes.

Place the salmon in a bowl and season with a pinch of pepper, a few drops of lemon juice, olive oil, and chopped parsley.

Wash the zucchinis and cut them into cubes.

4.

In a pan, heat a bit of olive oil with the garlic clove and a sprig of parsley.

Add the zucchini, salt, and pepper, and cook over medium heat for 6-7 minutes.

Towards the end of cooking, add the salmon and sauté everything for 2-3 minutes.

Cook the pasta in salted water. Once drained, toss them with a bit of olive oil to prevent sticking.

In a large bowl, mix the pasta, salmon, and zucchini. Season with olive oil, lemon juice, and mix well to combine the ingredients.

9.

Finish with a bit of chopped fresh parsley and let the salad rest in the refrigerator.

Tips

If you like saffron, you can add it to the pasta cooking water for an extra flavor and a more intense color.
